Okra

I know a lot of people who doesn't like Okra for different reasons:

1. Because it's gooey and slimy
2. It's unexplainable skin texture.
3. There's too much pea pod like seeds in it.

I've known my husband to be very picky when it comes to veggies. But along our journey as a married couple,  I was able to inject a lot of food factors to a healthier living. Just recently, I've finally convinced my husband to like Okra. When I say like, it's not just eating a piece or for the sake of pleasing me or granting my request. Like, is when he requests a plate full of blanched, fresh Okra. It is now part of our daily meal always served during lunch and dinner.


When I was little and my dad didn't have a job, our daily food went around vegetables farmed from a vacant lot beside our house. We had corn, pechay, peanuts, mustaza, sweet potatoes, green leafy veggies such as talbos ng camote, alugbati, saluyot and okra. We didn't have money but I felt so rich just having these in our yard, it's like having a small farm. I can eat any vegetable but I consider Okra as one of my favorites. I steam or blanch it, then as dip, I prepare simple soy sauce and vinegar mixture or shrimp paste with calamansi juice paired with some hot rice.
Here are some health facts on Okra. Hopefully this will change the mind of those who greatly despise this vegetable.

1. It is high in antioxidants.
2. Rich in Vitamin C, Calcium and Potassium
3. It is very high on fiber.
4. It lowers the risk of diabetes and a factor for blood- sugar control.
5. Lowers the risk of cancer.

* The simpler how Okra is cooked and served, the better. It doesn't require too much to enjoy it.

Our family knows somebody who recently passed away at the age of 103.  She was physically capable and very strong for her age.  We were amazed by her story and of the fact that she reached 103 years old. Our aunt told us that her mom may have reached 103 because she always demanded for a plate of Okra as part of her "daily meal". One day, she slept and didn't wake up anymore... her age caught up with her.

What I'm sharing here is just a thought which we can all learn from. The lifestyle nowadays shortens our life span. It's given that we will all die but personally, even if I'm old, I still want to move about do what I can to enjoy this world. So those vegetables that some of us hate like ampalaya and okra, these are contributing factors to long life, clean living and a healthy future.

Ampalaya Con Carne

One way to make bitter gourd more enticing and interesting to eat is by mixing it with beef or any meat that will surely balance its bitterness. We all want our little ones to eat vegetables. As a mom, I introduced eating Ampalaya or bitter gourd to my eldest son as early as 3 years old, same thing will follow with my youngest.  With my experience, to be able to get my kids eat bitter gourd, I make the dish saucy. Tomato sauce will do, oyster sauce and serve it with their favorite food (fried chicken, fish, etc). It's also best to just serve it on the table, let them eat  it (but don't force them) than say a lot of things about it.

Here we go!

Servings: 3-4
Ingredients:
  • 2 cups beef cubes (boiled until tender)
  • 1 1/2 cups beef broth
  • 5 cloves garlic (minced)
  • 1/2 tsp minced ginger
  • 1 medium onion (chopped)
  • 1 medium red tomatoes (cut into quarters)
  • 2 tbsp olive oil
  • 1 large Ampalaya (sliced into thin pieces)
 To lessen the bitterness, get rid of the seeds and the white lining beneath it then soak it in water.
  • 1/2 cup soy sauce
  • 1 cup water
  • 1/2 tsp black pepper granules
  • 2 tsp cornstarch
Procedure:
  • Boil beef cubes until tender. Drain the meat and set aside 1 1/2 cups of beef broth.
  • Mix soy sauce, water, cornstarch and black pepper granules then set aside.
  • Saute garlic in olive oil until medium brown.
  • Add onion and tomatoes, stir for a few seconds.
  • Add beef cubes and stir for a few seconds.
  • Add bitter gourd or ampalaya.
  • Add beef broth and simmer for 30 seconds or if vegetable is at least half- cooked.
  • Shift to low fire then add soy sauce mixture and stir evenly.
Ready to be served!
Of course, bitter gourd has a lot of health benefits. One is lowering/ balancing blood sugar levels. Every part of the plant is useful, that's why some prefer to juice it. But personally, would rather cook it.

All- Natural Food in Baler, Aurora

If there will be a reason why my family will want to have a property in Baler... aside from the beaches, food is a big factor, everything in Baler is all- natural/ organic. It's a big blessing to have a friend from Baler. Every time we go there, we're served with home-cooked food from breakfast, lunch to dinner.

Upon our arrival, a local fisherman and his wife with their fresh catch paid us a visit. Who wants fresh Tanigue?! In Manila, a kilo of Tanigue costs from around 280-300+php and it's not as fresh anymore.
Aside from 2 big Tanigue's, the fisherman also brought some small fishes. The farm we stayed in is just 5 minutes away from the ocean, so imagine the freshness of these fishes they delivered to us that day. In the evening, our host grilled slices of the Tanigue for dinner and paired it with Pako Salad (Vegetable Fern Salad).
Pako is another organic vegetable that's very abundant in Baler, Aurora. It's by luck to find fresh Pako in Manila. Pako grows along "clean" riverbanks or sapa. The tips are often blanched then used for salads or to match with any Filipino viand.
Pako is one of the food I enjoyed when we were in Baler. As a matter of fact, I bought 6-7 bunches at the Baler market. It survived our 6 hours of travel back to Manila. Aside from fishes and vegetables, Aurora Province also offers a vast variety of seafood. During our 2011 visit, my husband and I was already at the Baler market as early as 6am picking and buying fresh squid to be taken home. Same with mangoes and other fruits like watermelon.
Other things that can be very useful in cooking which you can find in Baler is coconut vinegar or sukang tuba, red/salted eggs, rice, potatoes and onions. Life in Baler is very healthy because processed food is not part of their lifestyle. Not a fast- food chain around.

When in Baler, it's either you eat at the only 5 star hotel in Sabang beach, dine at the small eateries by the beach,  rent or get a house where you can cook the fresh ingredients you bought from the market and enjoy healthy home-cooked meals throughout your stay.

Slimming Workout

Over our Sunday family get together at my parent's place, I was complemented by my mom that I have a slimmer body now compared to the last time she saw me. As usual, she asked if I've been working out lately. Well, the answer is no. But, I did cut a little on what I take-in regularly. Aside from that, household chores and frequent walking has been backing me up. One of the things that I inherited from my mother's side as we age, is getting wider hips. Our waist may still be the same, but when we talk about our hips, our butts and our thighs, these are the parts of our body that we need to work out on. It's very common  for the for girls in the family. So as early as now, I keep on warning my younger sisters to watch out for it.  I like the fact that this dilemma is not pulling too much pressure on my part in terms of getting a "sexy" body. I love my body right now, all I need is the right maintenance to remain healthy with what I have presently reached. I have been planning to create a daily workout routine. We have these workout equipments here at home, but really, I don't have any idea on how to begin. I researched that some workout routines are being used for bodybuilding. And it greatly helps on increasing one's strength and endurance. Aside from that, I might just have a healthier future if I begin working out at the early age of 32. Seriously,  exercising is not only  for the purpose of  having a slimmer body, but also to work on every muscle, every system I have in order for my body to function well.

Stop Smoking!

When I was a kid, I remember asking my dad to stop smoking. Out of nowhere, I approached him and asked. I wasn't expecting that he will seriously take that simple request of mine. And I was 8 years old then. Now, every time we look back, at 32 years old, he's still thanking me. My dad is healthier, he looks young for his age, he doesn't have any ailments. And when it was my turn,  I stopped immediately when I found out that I was pregnant with my first child. How did I ever survive the process of stopping? Just thinking that I asked my dad to give up cigarette smoking, gave me the inspiration to help me stop. I guess it was my motherly instincts working too. And like everyone else who went through the very same dilemma, I started to have some cravings after quitting. I turned to candy as a solution to permanently cut off my cravings. Up to this very date, I still crave for it but much lesser. While I was able to conquer smoking, my husband on the other hand, is having a hard time from at least lowering his sticks daily. Through time, he doubled from 1 pack to 2 packs. I guess, most of his co-workers are also undergoing the same thing. And it's more of a struggle now, since smoking has become a stress buster to working individuals.
Cigarette smoking is a big contributor when it comes to health risks. It  lowers our immune system then it targets the main organs of our body. Diabetes alone, if not controlled and worsen by smoking can affect the heart and the kidneys by disrupting its functions in the body. And of course, our lungs is directly affected. Don't forget to add the risks of aging. Put it this way, Smoking and aging put together will give the worst results when it comes to health. Believe me, everyday, I help my husband get through  by  lessening his sticks. Good thing that the company he is working for also prioritizes the health of their workers. Raw Food Diet

Here's what I got to say, nothing can be healthier than eating all natural food. From fruits, vegetables and even fish. I grew up with fresh food on the table. My father created a small farm right at our very yard. The health benefits? well, throughout my lifetime I was never hospitalized. No one in the family got seriously sick. My parents are active and they even look younger for their age. 
With proper discipline, having a raw food diet everyday is going to be easy. Raw food living is now a trend in some countries. I pray that this trend will be permanent and I hope it will never change. With the fast food industry getting bigger, I am very thankful that organic products are also out competing. Better, if organic raw food will replace most canned, dried and frozen goods in the supermarket. Since it is fresh and free of preservatives, raw food must always be consumed within a certain period of time. And this guarantees that something fresh and healthy is always served on the table everyday, from breakfast, lunch, dinner and even on special occasions. I came across some easy raw food recipes.  Restaurants serving organic are coming out slowly. I went to several restaurants where they offer organic ingredients for your dish. And I thought I'll have a hard time introducing raw food to a little boy who would rather choose fried chicken and chocolates. Believe it or not, at the age of 6, my son is loving organic.

Ginger Rice

If there's something I learned from my On The Job Training 10 years ago, Ginger Rice was one of them. It was one of the main rice courses the guests and clients are always looking for in that particular 5 Star hotel.  Luckily, after my restaurant training, I was assigned at the kitchen of that very same restaurant and it was time to discover the magic that was happening in order to serve scrumptious dishes everyday. The chefs were not allowed to give it's trainees the secret recipe,  so I became more observant of the ingredients and the process. 

Today, I will share my own recipe on how to whip up this healthy rice dish.

Note: The recipe I will be posting is far different in order to protect the hotel's menu and it's business.

Simple Ingredients:
  • Your regular rice
  • Ginger- may be crushed, sliced, chopped or minced (equivalent to 1 tablespoon)
  • Dash of Turmeric (luyang dilaw)
How To: Boil them all together

Trivia: Turmeric is also from the Ginger family. Turmeric is used as a spice in South Asian and Middle Eastern cooking.
One of the healthy use of Ginger is to  lower cholesterol levels and prevent the formation of blood clots. And it's been proven. Here's more about the Health Benefits of Ginger.

Tomorrow, I will be cooking a different version of Ginger Rice, watch out for it.

How Safe Is Your Drinking Water

Just a year ago, my son suffered from a terrible tummy ache, which was later on diagnosed a serious sickness acquired from drinking water. For our home, we have been a frequent buyer of clean water, processed for this matter. But ironically when we eat or dine out somewhere, sometimes we stay satisfied with tap water. So when my son got this terrible sickness, we immediately traced the cause, and true enough, tap water was the main reason. Let's face it, our environment is not as clean compared to our grandparents' time. Reverse Osmosis Water Filter was the only purification method they considered back then. Now in the present, water filter of all types are popping out in the market  just to be able to preserve with what's left of our natural running water.

With what my son went through, I have a filtering system for every faucet in the house. We still buy processed water for drinking just to be sure.

Lemon-Tarragon Fish Dory

Aside from Basil, Tarragon is one of my favorite herbs. For my mom, this is her favorite. I practically grew up with it. My mother taught me the first dish that involved herbs, one of them is: Tarragon Chicken. As we all know herbs like Tarragon are one of the best substitute if we want to eliminate salt completely. Experts, have them delivered fresh everyday, that may require a good auto transport. Others, grow their own herb garden. Either way, dried or fresh it doesn't matter.

Tarragon is one of the four fines herbs of French cooking, and particularly suitable for chicken, lasagna, fish and egg dishes.-source-
Since it's hard to find fresh Tarragon in the market today, I opted to buy the usual dried Tarragon. Here's another easy- healthy recipe for you.

Ingredients:
  •  Dory Fish Fillet
  •  Extra Virgin Olive Oil
  • 1 tbsp dried Tarragon or fresh
  • 1 lemon chopped into quarters
  • Ground pepper

How To:
  • Drizzle both sides of fish with olive oil
  • Squeeze lemon on each side
  • Season with Tarragon and Ground Pepper
  • Heat 1 tsp of Olive Oil in Frying Pan
  • Cook each side of the fish for 2-3 mins
Servings: Good for 2-3

Pasta: Basil With Hungarian Sausage Bits

I'm proud to share that I was able to come up with another pasta recipe of my own without giving myself a hard time with the preparation. That's right folks, here's another easy pasta recipe.

Ingredients:
  • 300g Linguini
  • 1 whole garlic minced
  • 1 cup chopped  fresh sweet basil 
  • 2-3 tbps grated Parmesan cheese
  • 3-4 tbsp extra virgin olive oil
  • 2 Hungarian Sausages chopped
  • 3 medium red tomatoes chopped into quarters
  • Ground Pepper

How To:
  • In a sauce pan, boil water and simmer pasta until half- cooked, do not drain.
  • In a separate pan, saute garlic until light brown.
  • Add chopped Hungarian Sausages. Stir for a few seconds.
  • Add chopped tomatoes and stir again for a few seconds.
*From the other pan, using a pasta ladle or a slotted spoon, slowly transfer cooked Linguini to the pan of sauteed mix of garlic, sausage and tomatoes. Mix everything together in low fire.
  • Add grated Parmesan Cheese and Chopped Fresh Sweet Basil. Add Olive oil if needed.
  • Add ground pepper to add flavor.
* NO SALT!

 Now that's an instant Pesto Mix by the way. Top every serving with more Parmesan cheese. To add, this is also perfect with a slice or 2 of wheat bread.
Servings: 3-4

Poached Egg

A healthy way of cooking egg is through poaching. Egg simmered in water, no oil or fat used. Most rice cooker being sold nowadays comes with an egg poacher. If you don't have an egg poacher, the traditional way of cooking it are as follows:

1. Simmer 1-2 cups of water in a small sauce pan.
2. Add 1 tbsp of vinegar. The vinegar coagulates the egg white turning it into a perfectly poached egg.-source-
3. In a bowl, crack egg, then slowly pour it in the simmering water with vinegar.
4. Cook 2-3 minutes.
5. Use slotted spoon to remove cooked egg. Serve immediately.

Poached eggs are commonly used for Eggs Benedict. You can also serve it seasoned with the herb of your choice, ground pepper or cheese. As for me, I like it plain.

No Salt---Beef Stroganoff

It may look like a common Beef Mechado dish for some, but  once you taste, it's going to be something new for your palate.  I researched online for low salt, low fat dishes and one of the easiest recipes I found is Beef Stroganoff.

Please click on the link just below the picture for the recipe. To make the dish look more appetizing I added some carrots, potato slices and Annatto or Atsuete for color. Great colors for Halloween Contact Lenses. By the way, Annatto produces a reddish pulp which contains the seeds that is often used both as a coloring agent and for flavoring. And I prefer serving it with rice instead of noodles or pasta.

If you get to view the original recipe, you won't believe that it can taste so good even without salt. The key ingredient to a Stroganoff dish is the sour cream. Perfect with  your healthy green salad and hot Jasmine Rice.

No Salt---Tuna Munch

Halu! I have been busy with family for the past 2 weeks. Just recently, my husband got hospitalized. It's Dengue for those who are still clueless. Since we're already in the hospital, we decided to have the rest of his system checked. The results turned out normal . But still , we were given a guide towards a more healthy lifestyle. And part of the list is preparing food/ meals that are low on fat and salt. As much as possible, the doctor recommends this low-fat, low-salt diet. He has a point, we don't wait for anything that will greatly affect our health then, that's the time we will consider going low on everything. It's better to be sure NOW than to be sorry LATER (when it's already too late).

One of the healthiest main ingredient we can use is fish.  Again the recipe I will be sharing is easy as cooking a sunny side up egg.
  • All you will be needing are: fish fillet, dried or fresh herb of your choice, ground pepper, 2 eggs (beaten), 1/2 Cup flour, 1 Cup Bread Crumbs or any and 2-3 tbsps olive oil or canola oil for frying.

How To:
  • Season fish with herb and ground pepper
  • Dip in beaten eggs
  • Coat with flour
  • Then dip it again in eggs
  • Coat with bread crumbs
  • Heat oil in frying pan
  • Then fry each around 2-3 minutes for all sides. I prefer it pan fried- to make sure that the recipe will stick on the healthy side by not getting too much oil.

With mine I used chops of Tuna. Then I drizzled it with a little olive oil, thyme and black pepper. Served with Honey-Mustard. It can also be served plain.

Body Mass Index

I'm often asked by some people, most of them are parents, how come my son is thin. It's been a frequently asked question, to a point that it made me feel that they think my son is not healthy. When I became a mom, one of the things I took note of from the list of advises my son's pediatrician, is being able to keep the child healthy by being able to maintain the child's normal weight right for his/ her age. I can't say "regardless of how the child looks like", but in my case, my son may not look big or "fat" but he is a lean boy. He looks thin but he is heavy.  His weight is right for his age. Using BMI, you can now calculate your child's weight and your very own weight in an instant. This can be useful, especially when you find it difficulty to set an appointment to see your doctor.

BMI or Body Mass Index is a calculated value which allows you to define how well the mass of the human body corresponds to the height and consequently a degree of over- or underweightness. It was developed by Belgian scientist Adolphe Quetelet in 1869. BMI can estimate the risk of developing an illness due to excess or low weight.It can also calculate your body mass index using the weight and the height. BMI calculator can determine what the category you belong to: underweight, normal, overweight, or obese.They also provide  information on how to lose or gain weight, and several free diet plans. BMI is a giant step to a healthy living.

Camote Tops

Kamote Tops or Sweet Potato Tops is one of the healthiest local green vegetable that can be found anywhere here in the Philippines.

I bought 3 bunches today. Fresh from the market. 1 bunch I plan to add to my sinigang, another as vegetable salad and the next as a juice drink. Yup, as juice drink. Again as juice drink. When I was a kid my dad would always boil lots of Camote tops harvested from our yard. It was really good, a great substitute for instant fruit juices. Being one of the healthiest greens around, now I know why throughout my 31 years I didn't get sick and not a visit to the hospital. True, first time I laid on a hospital bed was when I gave birth. Same with my siblings, none of us got seriously sick. And with discipline we like to continue this lifestyle until we get old.

Steamed, blanched or boiled then drained. Seasoned with Calamondin juice and a little salt. Mixed with chopped red tomatoes and white onions.

Health Benefits of Camote Tops:
1. Sweet potato tops are excellent sources of antioxidative compounds,
mainly polyphenolics, which may protect the human body from oxidative
stress that is associated with many diseases including cancer and
cardiovascular diseases.

2. Sweet potato greens have the highest content of
total polyphenolics among other commercial vegetables studied.

3. Sweet potatoes contain protein, dietary fiber, lipid, and essential
minerals and nutrients such as calcium, phosphorous, magnesium, sodium,
potassium, sulfur, iron, copper, zinc, manganese, aluminum and boron.

Rocket Salad

Arugala has been part of my salad bowl since late 2009. I was looking on salad greens in the grocery store, and at the same time my palette was also looking for something new. I got attracted to the name itself. That's when I discovered it. It became my favorite since then.
I always serve it with some homemade honey- mustard.

Arugula is mainly used as a salad green. It has an spicy and peppery flavor.  It is an annual herb, grown for its mustard-like leaves. Use it to add a little kick to salads and other dishes. Also known as 'the rocket' (Italian Cress). A leafy green herb of the mustard family. 
Arugula is very low in calories and is a good source of vitamins A and C, folate, calcium, and magnesium. Can be eaten raw or cooked. It is excellent when added to pasta dishes or accompaniment to roasted or grilled meats.- source-

Beyond My Kitchen

This entry was posted as an update for my food blog early this evening. Since a new story was set to be shared, I decided to move on and use as an official food entry.

It's been awhile since I last tweaked on my food blog or even posted anything that is food related.
Truth is, I lost most of my food files when my computer got hit by a terrible virus 2 weeks ago. Plus, my family lessened eating fast food, take -out, anything that is processed beyond our kitchen. It was quite an adjustment.

Lesser discoveries, lesser food adventures, lesser blog entries. But lifestyle greatly affects health that's why we had to do it.

It's just weird when you're into organic, and all the other health options in the house, but later on, you opt to eat out or order food to go. I just realized that it destroys the whole idea why you chose to be healthy from the very heart of your own home.

With that, we looked for a better replacement that will keep our minds focused with something else. My husband and I even our son made the Spa part of our regular routine. Well, that's for us.

We are not eliminating the fun of eating out totally though, we still have occasions to celebrate.

Had to think of ways to be able to keep up with the pace, and I was able to. So here I am presenting another phase for From My Kitchen and Beyond.

I know, some links are missing... I'm still thinking if I should put them all in 1 page or just line them up in the sidebar... will see later. Don't worry, I always keep my friends and contacts online. Hopefully I will be able to do some drops and blog hop again.

Korean Red Ginseng

Korean ginseng is a perennial herb with typical light colored fleshy root. For years I have been seeing Ginseng as part of my Dad's health options. The taste is sweet but has a bitter aftertaste. It's medicinal and I guess the bitter taste is the substance that's why Ginseng is very healthy. Korean Ginseng bears a red berry- like fruit. The ginseng stem is deep red in color. It is grown in moist and covered parts of Korea.

Ginseng helps fight colds and flu viruses. Research shows that when Ginseng is taken before the onset of a cold or flu-like virus, it can help lessen the chances for the virus to get stronger and sometimes kills the virus in an instant. WholeMeal Pasta in Pesto

My Birthday this year was a very healthy one. Aside from having fresh greens and fruits on the table, the main highlight was a wholemeal pasta with pesto dish cooked by my husband. No salt added. Just plain pesto (homemade pesto---better), some mushrooms, green olives, EVOO, parmesan cheese and our favorite herbs combined together.

The pasta was perfectly cooked the right way... Al dente!
Wholemeal pasta is made out of flour particularly the entire grain seed, that is very rich in protein. A high-quality wholemeal pasta, may be found light brown in appearance. Wholemeal may be a bit expensive than the regular white pasta. But when it comes to health, nothing is too expensive for me. A few grams is good per serving. By the way, my son Franky liked it. I was feeling a little unsure, that he might not like it. Well, he finished a whole plate! I am very thankful that at an early age, he can appreciate healthy food even if its not as colorful as a party spaghetti.
